What is crumb cake?
Crumb cake is a single layer cake made in a square, rectangle or circle pan. Traditionally, crumb cake was made of yeast dough, but it’s very rarely made that way anymore. It’s topped with a streusel (crumb) topping and either a glaze or powdered sugar.
Crumb cake is similar to coffee cake in that it’s a soft single layer cake with a buttery streusel. The only difference is that most coffee cake recipes have way more cinnamon in the crumble and the crumble is in the center and on top of the cake.
Speaking of coffee cake, you have to add my Browned Butter Coffee Cake with Espresso Icing to your baking list!
What you need to make Orange Honey Crumb Cake
As far as equipment you will need,
8-inch cake pan – an 8-inch cake pan or springform pan is best for this recipe. I’ve linked an 8-inch cake pan here.
Mesh strainer or duster – to dust powdered sugar over the crumble. I’ve linked a duster here.
You’ll also need, mixing bowls, a stand or hand mixer, cooling rack, a citrus zester and parchment paper.
As far as ingredients,
For the cake you will need all-purpose flour, baking powder, baking soda, salt, granulated or cane sugar, orange zest, salted butter, vanilla extract, honey, Greek yogurt, buttermilk and orange juice.
It’s important that the refrigerated ingredients in the cake are room temperature before baking. I set mine on the warm oven-top about an hour before baking.
For the crumble you will need all-purpose flour, granulated sugar, brown sugar, vanilla extract, melted butter, cinnamon and salt.
Last, but not least, you will need powdered sugar.
How to make Orange Honey Crumb Cake
This recipe could not be easier to make! Start by lining your cake pan with parchment paper, I crumble mine up before lining the pan to make it easier and avoid all the indents in the cake.
Next, zest the oranges and make the crumble. Stir together the melted butter, vanilla, cinnamon, flour, sugars and salt until no dry flour remains. Set it aside while you make the cake.
To make the cake, add the orange zest and sugar to a large bowl. Rub together with your fingers until the sugar is moist and fragrant. Add the honey and butter and whisk or beat until combined. Add the eggs, vanilla extract and yogurt and mix again until combined.
At this point, your batter will look curdled. That’s ok, it’s because of the liquid to fat ratio. Set this aside while you stir together the flour, baking powder, baking soda and salt in a separate medium bowl.
Add half of the buttermilk and orange juice along with half of the flour mixture to the wet mixture and whisk just until combined. Add the remaining buttermilk, orange juice and flour mixture and mix again. Pour into your prepared cake pan and top with the crumble.
Bake at 325 Fahrenheit for about 35-40 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for a few minutes before removing to a cooling rack to cool off a bit more. Once it’s cooled off a bit, dust with powdered sugar and slice.
Serve warm with coffee or tea. That’s it, so easy!
