The filling and crumble are both made with browned butter and vanilla bean paste giving this dessert an insane flavor. You’ll be making this easy, flavorful peach crumble all summer long.
I know it’s not quite peach season yet, but this week I was really craving a peach dessert. I decided to make an individual serving of peach crumble which turned out to be so flavorful and delicious! I knew I had to remake the crumble for my blog, but this time a larger quantity.
Browned Butter Vanilla Bean Peach Crumble starts with a peach filling made with browned butter, vanilla bean paste, and brown sugar. These components make for a caramelized-like peach filling when baked.
The peach filling gets topped with the most sweet and flavorful crumb topping made with more browned butter, brown sugar, and vanilla bean paste. After it bakes up golden and bubbly, top with a few scoops of vanilla bean ice cream and you’re in heaven!
Because peaches are not in season where I live, I used frozen peaches for this recipe. You can, of course, use fresh peaches if you’d rather, just reduce the amount of bake time.

What you need to make Browned Butter Vanilla Bean Peach Crisp
As far as equipment, you will need: a 9×9 pan, a pie dish or an 8–10-inch skillet. You will also need a mixing bowl and a small saucepan to brown the butter.
For the filling, you will need:
Peaches – as stated above, you can use fresh or frozen peaches.
Lemon juice – this aids in thickening the filling.
Cornstarch – this will slightly thicken the peach filling as it’s baking. If you don’t have it, the peach filling will be a little bit runny-still delicious though 😉
Butter – salted or unsalted butter will work. This ingredient can be cold or room temperature, it doesn’t matter.
Brown sugar – Brown sugar gives this filling and crumble a deeper, caramel-like flavor, you can substitute with white sugar if that’s all you have on hand.
Vanilla Bean Paste – I recommend using a vanilla bean paste, however a good amount of vanilla extract will also work.
For the crumb topping, you will need:
Flour – all-purpose flour is best.
Oats – any kind of oats work.
Salt – a good pinch of salt will enhance the flavor.
Cinnamon – a little ground cinnamon pairs well with these flavors.
Brown sugar – brown sugar is preferred, but you can substitute with white if that’s all that you have on hand.
Butter – salted or unsalted will work.
Vanilla Bean Paste – As stated above, vanilla extract can be substituted.
How to make Browned Butter Vanilla Bean Peach Crumble
This dessert couldn’t be easier to make, just add the filling ingredients to a baking dish and stir to combine. Next, you’ll add all of the crumble ingredients to a bowl and mix together with a fork. Sprinkle the crumble over the peach filling and bake until golden and bubbly.

Browned Butter Vanilla Bean Peach Crumble
Ingredients
For the crumble
- ½ cup salted butter
- ¾ cup + 1 tbsp all purpose flour
- ½ cup oats
- ½ tsp ground cinnamon
- ¼ tsp salt
- ¼ cup brown sugar packed
- 1 tsp vanilla bean paste
For the filling
- 3½-4 cups sliced peaches, fresh or frozen if using frozen, let thaw for 30 minutes
- 2 tsp lemon juice
- 3 tbsp brown sugar divided
- 2 tsp vanilla bean paste
- 1 tbsp cornstarch
Instructions
- Start by making the browned butter. Melt butter in a small saucepan over medium heat. Once melted, stir constantly until the butter turns a medium brown and smells toasty like caramel. Pour the butter into a heat safe dish and let cool down most of the way.
- Preheat the oven to 350 ℉. Add the peaches, lemon juice, 2 tablespoons of the brown sugar, vanilla bean paste, 1 tablespoon of the browned butter, and cornstarch to an 8–9-inch pie pan or skillet. Stir to combine the ingredients. Sprinkle the remaining tablespoon of brown sugar over the peaches and set aside.
- In a medium bowl, stir together all of the crumble ingredients and the remaining browned butter. Stir together with a fork. The mixture should be mostly dry and crumbly. If it seems wet and isn't easy to crumble, add more flour 1 tablespoon at a time. Sprinkle the crumble over the peach filling.
- Bake for about 55 minutes. * If using fresh peaches, reduce the bake time about 10 minutes* The crumble should be lightly golden brown and bubbly. Serve warm with a scoop of vanilla bean ice cream.
