What you need to make Fruit Crisp for one
As far as equipment, you will need a small ramekin or mini dish. I’ve linked some options here. I also recommend placing the dish on a baking sheet lined with foil in case the berries bubble out of the dish a bit.
Here is a list of the ingredients you will need,
Berries or fruit of choice – like I said above, these can be fresh or frozen. If they are frozen, there is no need to thaw them!
Lemon juice – this will aid in thickening the cooked berries. Alternatively, you can use lime or orange juice.
Cornstarch – a thickener for the berries.
Honey – I used honey to sweeten the berries. You can substitute with your sweetener of choice.
Ingredients for the crisp topping,
Melted butter – alternatively, you can use melted coconut oil or ghee.
Brown sugar and granulated sugar – just a small amount is used to sweeten the crisp.
Vanilla – this is optional, but I find it enhances the flavor.
Oats – rolled or instant oats will work.
Flour – I used all-purpose, but you can substitute with oat or gluten free flour.
Cinnamon – just a dash of cinnamon really enhances the flavor and adds warmth to the crisp.
Salt – helps to balance the sweetness.
How to make Fruit Crisp for one
To make fruit crisp, simply stir together berries, lemon juice, cornstarch and honey in a small oven safe dish or ramekin. Set aside. In a separate small bowl, stir together the melted butter, sugars, vanilla, oats, flour, cinnamon and salt until no dry flour remains.
Sprinkle the crisp evenly over the berries. Place dish on a small cookie sheet lined with foil and bake at 350 Fahrenheit for about 25-30 minutes. Fruit Crisp will be bubbly and the topping will be lightly golden brown.

Ingredients
- ¾ cup fruit of choice I used frozen cherries and blueberries
- 2 tsp lemon juice
- 1 tsp cornstarch
- 1 tbsp honey
- 1 tbsp butter melted
- 2 tsp brown sugar
- 1 tsp cane or granulated sugar
- ¼ tsp vanilla extract
- 1 and ½ tbsp oats
- 2 tbsp all-purpose flour
- dash of cinnamon
- pinch of salt
- canned coconut cream, whipped cream or ice cream for topping
Instructions
- Preheat oven to 350 ℉. In a small oven-safe dish or ramekin, stir together the fruit, lemon juice, cornstarch and honey. Set aside.
- In a small bowl, stir together the butter, sugars, vanilla, flour, oats, cinnamon and salt until no dry flour remains. Sprinkle evenly over the fruit mixture.
- Place the dish on a small cookie sheet lined with foil to catch any filling that may bubble out of the dish. Bake for about 25-30 minutes. Crisp will be bubbly and golden brown.
- Let cool for a few minutes before topping with desired toppings and enjoying warm.
