Preheat oven to 350 ℉. In a small oven-safe dish or ramekin, stir together the fruit, lemon juice, cornstarch and honey. Set aside.
In a small bowl, stir together the butter, sugars, vanilla, flour, oats, cinnamon and salt until no dry flour remains. Sprinkle evenly over the fruit mixture.
Place the dish on a small cookie sheet lined with foil to catch any filling that may bubble out of the dish. Bake for about 25-30 minutes. Crisp will be bubbly and golden brown.
Let cool for a few minutes before topping with desired toppings and enjoying warm.
