Fruit Crisp for One

Jammy fruit filling with a comforting crisp topping served warm with coconut cream or ice cream. Use whatever fruit you have on hand!

Ingredients

  • ¾ cup fruit of choice I used frozen cherries and blueberries
  • 2 tsp lemon juice
  • 1 tsp cornstarch
  • 1 tbsp honey
  • 1 tbsp butter melted
  • 2 tsp brown sugar
  • 1 tsp cane or granulated sugar
  • ¼ tsp vanilla extract
  • 1 and ½ tbsp oats
  • 2 tbsp all-purpose flour
  • dash of cinnamon
  • pinch of salt
  • canned coconut cream, whipped cream or ice cream for topping

Instructions

  • Preheat oven to 350 ℉. In a small oven-safe dish or ramekin, stir together the fruit, lemon juice, cornstarch and honey. Set aside.
  • In a small bowl, stir together the butter, sugars, vanilla, flour, oats, cinnamon and salt until no dry flour remains. Sprinkle evenly over the fruit mixture.
  • Place the dish on a small cookie sheet lined with foil to catch any filling that may bubble out of the dish. Bake for about 25-30 minutes. Crisp will be bubbly and golden brown.
  • Let cool for a few minutes before topping with desired toppings and enjoying warm.
