BJ’s Brewhouse is famous for their Pazookies. I recently tried one for the first time and was pretty surprised! This wasn’t your typical thick, overly sweet and gooey cookie. Don’t get me wrong there’s a time and a place for that kind of cookie, but after you’ve devoured an appetizer, fries and a double cheeseburger it’s probably not the time.
This cookie was thin and lighter, yet still delicious and really hit the spot after my meal. I knew I had to recreate this at home, so I did just that. The first time it was a little too rich so the second time I added less butter and brown sugar and I have to say it turned out pretty darn close to the BJ’s Pazookie I had, dare I say better! - Cane or granulated sugar
- Brown sugar
- Vanilla extract
- 1 large egg yolk
- All-purpose flour
- Mini semi-sweet chocolate chips
- Salted caramel sauce, for topping
- Flaky sea salt, for topping
- Vanilla Bean Ice cream, for topping
No leavening agent (i.e. baking powder or soda) is used in the recipe to ensure the cookie is thin and similar to BJ’s Brewhouse.
How to make Salted Caramel Chocolate Chip Pazookie
In a small bowl, combine the butter, sugars, vanilla, and egg yolk with a fork. Add the flour and chocolate chips and mix again until all the flour is incorporated. Spread the mixture into a greased 6-inch cookie pan or skillet.
Bake at 350 Fahrenheit for about 15 minutes or until lightly golden brown. Let the cookie cool off for about 5 minutes before topping with Vanilla Bean Ice cream, caramel sauce, flaky sea salt and more mini chips.

Salted Caramel Chocolate Chip Pazookie
Ingredients
- 3 tbsp salted butter melted
- 3 tbsp sugar
- 2 tbsp brown sugar
- 1 large egg yolk
- ½ tsp vanilla extract
- ⅓ cup all purpose flour
- ⅓ cup mini semi-sweet chocolate chips plus more for topping
- 1 scoop vanilla bean ice cream for topping
- salted caramel sauce for topping
- flaky sea salt for topping
Instructions
- Preheat oven to 350 ℉. Grease a 6 inch cookie pan or skillet and set aside. In a medium size bowl stir together the butter, sugars, vanilla and egg with a fork. Stir in the flour until no dry flour remains. Fold in the chocolate chips. Spread into prepared pan and bake for 15-18 minutes.
- Cookie will be a light golden brown and still gooey in the center. Let cool for a few minutes before topping with a scoop of ice cream, caramel sauce and flaky sea salt. That's it! Dig in and enjoy 🙂
